Cold Heirloom Tomato Soup

From Chef Ryan Gaultier of the Glowbal Group. Heirloom tomatoes are an exciting way to explore the countless different colours and flavours of the not-so-humble tomato. Use your favourite types of heirloom tomatoes, or use this recipe as an opportunity to try varietals new to you. This chilled soup, with dramatic flavours of vanilla, chilies and mangoes, is an extravaganza for your palate!

5 medium-large cut Heirloom Tomatoes
½ peeled and cut Cucumber
¼ pod of scraped Vanilla Bean
½ cut Mango
¼ chopped Birds Eye Chili Pepper
1 zested and juiced Lime
1 cup Apple Juice
½ oz chopped Mint
Sea Salt to taste

*Place all ingredients into a powerful blender or processor and puree until completely smooth.  Pass the soup through a fine sieve.  Serve extra cold and garnish with just about anything…
