INGREDIENTS:
Crust
2 1/2 Cups Organic All Purpose Flour
1 Tbsp Organic Raw Sugar
3/4 Cup Organic Butter, chopped into small cubes
1/4 Cup Organic Lard, chopped into small cubes
1 Tsp Sea Salt
1 Tbsp Meyer Lemon Zest
1 Tbsp Meyer Lemon Juice
1/8 Cup Cold Water
Filling
14 Organic Granny Smith Apples
1 Cup Organic Raw Brown Sugar
1/2 Cup Organic Raw Sugar
1 1/2 Tsp Sea Salt
2 Springs Organic Rosemary, chopped fine
1 Tbsp Meyer Lemon Juice
5 Tbsp Organic Butter, melted
1 Tbsp Organic All Purpose Flour
Caramelized Pecans
2/3 Cup Organic whole Pecans
2 Tbsp Organic Butter
2 Tbsp Organic Brown Sugar
INSTRUCTIONS:

Press Your Dough
1. Start by placing 2 cups of flour into a food processor with dough blade inserted. Add sugar, salt and mix gently.
2. Add the chinks of butter and lard, and gently process till crumbled. Do not over mix – dough should be covered in flour.
3. Remove dough from processor and place onto parchment paper. Add Meyer lemon juice and Meyer lemon zest.
4. Sprinkle cold water on top of dough and add remaining 1/2 cup flour. Cover with a layer of plastic wrap and then press till the mixture begins to hold together. So not over press or mix the dough with hands.
5. Cut dough in half and refrigerate for 1 hour.
Caramelize Your Apple Filling
1. Peel all apples, chop into slices that are 1/4 inch wide each.
2. 2. Add brown raw sugar, raw sugar, sea salt, chopped rosemary and Meyer lemon juice. Stir till all apples are covered evenly. 3. In a large pan, saute apple mixture till apples are soft and caramelized. Do not overcrowd the pan – instead work in small batches. After each batch, let apples cool on a cookie sheet.
Caramelize Your Pecans
1. Melt butter in large pan on low heat. Add brown raw sugar and cinnamon and let site for 1 minute. Add pecans and let caramelize for 2-3 minutes, stirring often.
2. Spread hot pecans out on a sheet of parchment paper and let cool. Try not to pick at them – they’re delicious!
Assemble Your Pie
1. Take dough out of refrigerator and let soften. Roll dough into a circle and line a 9″ pie plate with a thin layer. Trim edges and reserve for top crust.
2. When apples are cool, pour into pie plate and spread until even, including juices.
3. Pour mixture of butter and flour onto apple layer.
4. Assemble the top layer of crust into any pattern of shape you’d like.
5. Arrange caramelized pecans on top of pie crust.
6. Fix the edges of the pie together and bake in oven at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake for 20 minutes longer, or until apples are soft and crust begins to brown.
7. Remove from oven and enjoy together!
